This is a rare and unique small-batch shoyu (type of soy sauce) from Kyoto. Haku uses a 250-year-old mushiro koji method of layering soybeans applied with koji mold on bamboo and rice straw mats. After aging, the master craftsmen meticulously follow a cold-smoking process unique to the Haku family company using Mizunara Hard Wood, a type of Japanese oak. The result is a rich umami and complex flavor that is unlike any other soy sauce.
